How do I make a travel itinerary?
Start from the fixed points and fill in around them. Your arrival time, your departure time, and anything already booked are the skeleton. Everything else is negotiable and should be sequenced by geography rather than by how excited you are about it, because the thing that ruins a day is crossing a city twice, not picking the wrong museum.
The manual version takes an evening. What should a travel itinerary include?
A usable itinerary is more than a wish list with dates on it. At minimum each day needs a rough time for each activity, the travel time between stops, and where you are sleeping that night. The things people leave out and then regret are transfer times, opening hours, and a gap on the first day for the fact that you will land tired.
